Scrumptious Quick Spinach Morning Meals
You should know I am all about quick meals all day everyday especially in the mornings. Breakfast is really the most important meal of the day. And, let’s be honest with mom- life and morning craziness! I want quick, easy and of course a delicious meal!
Spinach is the best really! To me it’s the less “earthy tasting,” of the greens and is loaded with Vitamins and Minerals. A lot of people start diets and focus on their Macros (Protein,Fat and Carb) intake. But, we CANNOT neglect our MICRONUTRIENTS -Vitamins and Minerals. These micronutrients serve as cofactors in enzymes triggering many body reactions to happen.
Spinach is loaded with Vitamin A. Many Americans actually under-consume Vitamin A (along with C, D, E, Choline, Calcium, Magnesium, and Potassium). Vitamin A is a fat soluble vitamin meaning once absorbed, it attaches to substances within your body made of lipids, or fat. It comes in the following two forms:
- Preformed or animal based. Sources such as liver, organ meats,salmon, eggs.
- As a carotenoid (provitamin A) such as beta carotene which converts to Vitamin A in the body. Beta carotene is the plant-based form. Sources such as SPINACH or many red, yellow, orange and green to dark green vegetables.
Beware of taking OTC Vitamin A pills as some do go over the RDA (Recommended Dietary Allowance), and of all the vitamins , Vitamin A does have the possibility of becoming highly toxic since it is stored in fat. It is always much much better to get it from food and make sure the label is giving you the nutritional measure in RAE (Retinol Activity Equivalent) in mcg instead of IU. Alpha Green Waffles

Ingredients:
1 cup Kodiak Waffle/Pancake mix

1 cup egg whites
Macros: 14gP, 16gC, 1gF
This seriously takes me 5 minutes. Ohh and I also did not count the blueberry topping or the almond butter drizzle as part of the macros because your toppings of course are completely optional. I will also add, Alpha Greens by Alpha Supps has a Prebiotic/Probiotic/Enzyme blend which is GREAT for digestion. Quinoa Spinach Egg Scramble

Quinoa Spinach Egg Scramble
You will need:
- 2 cloves of garlic
- 1 cup of Spinach
- 2 eggs or ¾-1 cup egg whites (this portion really depends on your protein goals)
- ¼ cup quinoa
- 1 pinch salt and pepper
- 1 tbsp Olive Oil Extra Virgin
- 2 tbsp of Mozzarella (optional)
Instructions:
1.Cook quinoa as per packet instructions. (at most 10 minutes).
2.Saute Spinach with garlic briefly (take out).
3.Whisk eggs or egg whites .
4.Add sauteed spinach and cooked quinoa.
Macros: 12gC 17gF 32gP
(You could have the option to not drizzle the mozzarella cheese on it and use cooking spray instead of the 1 tbsp of Olive Oil. It would completely eliminate any fat )

Spinach Pancakes

You will need:
- 2 Bananas
- 1 cup Oats
- 1 cup Spinach
- 2 eggs
Instructions:
Mix all ingredients together in a blender ( I have a Vitamix and set at 2 for about 2 minutes)…until you reach a “pancake consistency.”
Total Serving size is 6 pancakes about 5 inches each in diameter.
Macros: 20gC, 3gF, and 4.5gP.

Pineapple Spinach Smoothie

Pineapple Spinach Smoothie
You’ll need:
- 1 ripe banana frozen
- ¼ cup frozen pineapple chunks
- 1 cup Spinach
- ½-1 cup Almond Milk
- 1 tsp vanilla
- ½-1tsp matcha powder

Instructions:
Add all ingredients to the blender and walaaa! Add more milk based on preferred consistency. Or you could substitute milk for egg whites to increase your protein content and lower your fat. It all depends on your macro targets.
